I’ve perfected this recipe, over the past few weeks. It’s a great make- ahead and also vegetarian. After making sweet potatoes for Kyton we’ve been inspired to try more ourselves. Enjoy!
1 large yellow onion - diced
1 Tablespoon oil (coconut oil is my favorite, but olive oil is fine too)
4 – 6 sweet potatoes – peeled and cubed
6-8 cloves of garlic- minced
2 cans of chick peas- 30 oz. total, rinsed and drained
2 cans of black beans - 30 oz. total, rinsed and drained
1 1/2 Tablespoons of Cumin
1 teaspoon of coriander
1 teaspoon salt
1 teaspoon ground pepper
1/4 cup of lemon juice
1/2 cup of honey
16 oz. spinach
6 oz. goat cheese
Sauté the onion in a small fry pan. Add onions, garlic and sweet potatoes to the crock pot. Add the beans, spices, honey and lemon juice on top. Cook for 3 hours on high. When only 30 minutes of cooking time remain add spinach. When dish finishes cooking mix in goat cheese. Store remaining in frig, this is great the next day. This can be served over rice or couscous.
