We’ve been working on planning meals and cooking as much as possible. I love taking recipes and making them healthier, so I thought I’d take the next few Tuesdays to share a few of my favorites.
1/2 cup (1 stick of butter) softened
3/4 cup brown sugar
1/3 cup white sugar
1 tsp baking soda
1 tsp baking powder
2 teaspoons vanilla (real not imitation)
10 oz Andes Mint Chips
1 2/3 cups white flour
1 cup wheat flour
Heat oven to 350
Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed.
Add Andes Baking Chips and mix.
Add Flour and continue to mix until all ingredients are well blended together.
Cover and chill in the refrigerator for about an hour
Spoon out dough onto ungreased cookie sheets
Form a ball and then slightly flatten.
Place on non-stick baking pans or airbrake sheets and bake for approximately 8-10 minutes.
Leave on cookie sheets for about 10 minutes after removing from oven. Move to cooking rack.
